Marie's Sausage Casserole

This is my sister's recipe and is absolutely delicious on a cold winter's night with hunks of fresh bread to dip in the gravy. This is a really quick meal when pushed for time and budget conscious as most of these ingredients we already have in our larder. 
(Please note this is a British recipe so Heinz baked beans can be bought in America, at World Market or on Amazon). 



Ingredients;

1 lb good quality pork & herb sausages
1 small onion, diced
1 tin Heinz baked beans
1 small tin butter beans
1/2 lb new potatoes, cubed
1 tin of diced tomatoes w/juice
1/2 lb small button mushrooms left whole
1 or 2 cloves garlic, chopped
1/2 cup frozen peas
1 tablespoon tomato paste
2 carrots, roughly chopped
1 leek, cleaned & chopped into rounds
1 teaspoon pepper
1/2 teaspoon salt
1 tablespoon mixed dried herbs
Couple dashes Worcestershire sauce
2 tins Beef Consommé, Oxtail soup or French onion soup, or can use chicken or beef stock if preferred.

Directions:

Fry or grill the sausages until golden brown. Set aside and leave whole or cut into bite sized pieces when cooled.

Fry the onion, garlic and leek in the sausage fat until just translucent, add the potatoes, mushrooms and carrots and fry for a few minutes more.

In a large pot add all the ingredients and bring to a boil, turn heat down to a low. Simmer and cook for 1 hour.

Serves 4

Note: American baked beans contain brown sugar and molasses and would overpower this recipe, please use a tomato based baked bean such as Heinz.
